Yes, Chef

The Book of the Week is “Yes, Chef” by Marcus Samuelsson, published in 2012. This is the autobiography of a famous chef. He was born in Ethiopia at the start of the 1970’s, but when he was three, he and his five year old sister were adopted by a Swedish couple.

Samuelsson grew up in Goteborg, Sweden. He enjoyed the suburban lifestyle of an industrialized country, including youth soccer. There were three posters on his bedroom wall: Michael Jackson, the king and queen of Sweden, and Pele. After ninth grade, Swedish schools channel students into a career-oriented or a university-oriented curriculum. In early 1989, after graduating, Samuelsson went to work in one of the fanciest restaurants in Sweden, “Belle Avenue.” At 21 years old, he supervised ten interns at a restaurant in Switzerland.

Because he was dark-skinned, Samuelsson encountered discrimination all his life– in the schoolyard and in employment. When he approached the restaurant “Bouley” to ask for a short-term internship, he was summarily turned away. The only famous black chef he had heard of during his training was Patrick Clark, who was ever rated only two stars by the famous restaurant guides Michelin and Zagat. Samuelsson writes, “When I had my own restaurant someday, I thought, I would never rule out someone based on race or sex or nationality…” He would hire all walks of life, due not to aiming for impartiality, but because he would achieve maximum cultural diversity.

To pursue his dream, Samuelsson thought he needed to continue to “pay his dues” in France. In order to get promoted, an aspiring chef has to “…completely give yourself up to the place. Your time, your ego, your relationships, your social life, they are all sacrificed.” In France, there were no intermediaries between farmers and chefs. The former were direct suppliers to the latter. In Switzerland, “We relied on shipments of shrink wrapped or frozen specialty items and that resulted in chronic separation between our product and seasonality.” The traditional French chefs’ training included brutal bullying of underlings by the upper echelons–who were the only employees who had job security.

In February 2008, Samuelsson opened his own restaurant, Merkato 55, which had an African theme. This blogger thinks it’s an insult to people’s intelligence to use the name “African” to describe an eatery, or use it in a book title, for that matter. This blogger theorizes that the labeler thinks people are too ignorant to recognize the name of an individual African country. African countries are all different, regardless of stereotypes.

Samuelsson and his business partners were pursuing a growth strategy. “In less than twelve months, we were scheduled to open eight new restaurants…” There were nine hundred guests at Samuelsson’s wedding in Ethiopia. Jimi Hendrix

The Book of the Week is “Jimi Hendrix” by Sharon Lawrence, published in 2005. This ebook is the biography of the world-renowned guitarist.

Hendrix suffered numerous hardships and deprivation in his childhood. Born in 1942, he was shuttled among various relatives, including his alcoholic father– divorced from his mother when he was 9; she died when he was in his mid-teens. He developed a passion for music, which was his one solace.

By the mid-1960’s, he had formed a band with two other musicians, and they were touring and recording on an unusually rigorous schedule. This prompted them to resort to partaking of pills, marijuana, hashish and LSD to mitigate severe sleep deprivation and stress.

Hendrix was afforded the opportunity to meet or play music with many other rock stars of his generation. Due to his incredible talent, he experienced tremendous fame very suddenly. Unfortunately, he was too passive and nice. Read the book to learn the details of how Hendrix fared after he allowed numerous greedy, manipulative and ungrateful people to enter his life.

 

I’ll Sleep When I’m Dead

The Book of the Week is “I’ll Sleep When I’m Dead” by Crystal Zevon, published in 2007. This is a biography of singer/ songwriter/ guitar player, Warren Zevon, written by his ex-wife.

Born in 1947, Zevon started partying like a rock star in his teenage years. He and fellow musicians partook of a variety of controlled substances, including marijuana, acid and hash. Warren later became addicted to alcohol and prescription painkillers. Philandering was a lifelong part of Zevon’s persona. Nevertheless, he was well-versed in what developed nations consider “the classics” in literature and in classical composers. As an adolescent, he was afforded the opportunity to meet Igor Stravinsky.

The many people interviewed for this ebook who drifted in and out of Zevon’s life all said he was immensely talented at writing imaganitive song lyrics. However, the reason most of them had a relationship with him that was rocky, or permanently severed, was due to his temperament when he was drunk, or his taking offense at a remark they made. He would ignore their communications for weeks or months.

At times, Zevon could utter witty lines, such as a) the title of this ebook, and, b) in the author’s recollection, “I can’t eat on an empty stomach.’ He’d down a little more vodka and we’d go have breakfast. Of course, every afternoon we spent hours in the cocktail lounge…” Sometimes, his self-destructive tendencies were insane, such as when she observed him playing darts in his bedroom; absent a dartboard. “There were all these holes in the wall… they were knife holes. He was lying in bed throwing a knife at the wall.” He also suffered from obsessive-compulsive disorder, for which he received no treatment. Various of his residences were a disaster.

The songs Zevon became most famous for include “Werewolves in London” and “Lawyers, Guns and Money.” Read the book to learn about a) his music career making albums; b) his composing music for movies; c) playing in the band on a prominent TV show as a fill-in musician; and d) whether he was able to turn his life around and repair his severed relationships with his family, friends and colleagues.

The Secret Olympian

The Book of the Week is “The Secret Olympian” by Anon, published in 2012. This ebook is about Olympic athletes (who were interviewed by the author) and the issues they face before, during and after the Olympics.

Most nation’s teams travel to the metropolitan area of the Olympic games locale two or more weeks prior to the actual competition. Of course, the better funded teams use the latest technology in adjusting to the local conditions. For instance, if the venue is at a higher altitude than what the athletes are used to, they sleep in “hypoxic altitude tents” if they don’t find them too noisy. Other high-tech devices are used to test the athletes’ physiology more than once a day– “…oxygen utilisation, lactate generation, statistics about lung capacity… at different cycling and running speeds…” Blood is drawn from the ear to be tested; a rectal thermometer tests core temperature.

In 1968 in Mexico City, Olympians saw various “firsts” in addition to high altitude that they hadn’t previously encountered. Gender and low-level drug testing were initiated. Mexico was the first developing, and Spanish-speaking nation, to host the Olympics. At those games, East and West Germany competed separately.

The author relates how extremely rare gold medallists are. In Great Britain, athletes who have won gold medals number about 300 out of a population of approximately 60 million; .000005 or 1 in 200,000 people.

Uncorked – Bonus Post

The ebook “Uncorked” by Marco Pasanella, published in 2012, is the author’s personal account about a family who opened a wine store in a ramshackle building on the site of the former Fulton Fish Market, an up-and-coming neighborhood in Manhattan in 2005.

According to the book, Americans have access to more than 24,000 kinds of domestic and international wines, although 4/5 of the wine sold at the store was the lowest-priced variety. Pasanella describes the steps he took in dealing with inspectors from the New York State Liquor Authority. He had to apply for a liquor license and thereafter, comply with arbitrary laws. He was told that “60% of a shop’s annual sales come between Thanksgiving and New Year’s Eve.”

Pasanella, a decorator in his previous career, learned various other factoids from friends and research. The high-volume wine sector in the last decade has shifted from London and New York to Hong Kong. A cork is the preferred stopper in commercial wine bottles because it releases sulfur fumes from chemicals used by some winemakers, while keeping oxygen out.

Opium Fiend

The Book of the Week is “Opium Fiend” by Steven Martin, published in 2012. This ebook is the personal account of an opium lover living in Bangkok in the last two decades.

The San Diego-raised author, who supported his opium habit through freelance travel writing, also had a passion for collecting antique opium paraphernalia. He considered opium smoking an art form, and its equipment, works of art.

In the mid-1800’s, there were two wars between China and Britain over the lucrative trading of the drug. When China lost, she “…grew ever more addicted, corrupt, and ungovernable. To this day, China and many Chinese around the world view opium as a dastardly British trick that kept their country poor and backward long after the British opium trade had ceased.”

In the 19th-century, Christian missionaries in China produced public outcry against use of opium when they wrote of the drug’s horrible effects from addiction. Meanwhile, bigoted white Americans, seeing opium usage among blacks and Asians, were appalled that the drug  “…encouraged the mingling of different classes and races!” These days, very few people are addicted to opium due to strict drug laws, and because it is expensive and hard to find.

An opium user actually receives a high from the vapors produced from a pipe and an oil lamp with a chimney. So as to preserve the drug’s alkaloid chemical composition, the oil used is camellia, vegetable, peanut or coconut oil, rather than kerosene or alcohol.

Medium Raw

The Book of the Week is “Medium Raw” by Anthony Bourdain, published in 2010. This is somewhat of a sequel to the author’s first nonfiction book, “Kitchen Confidential” in that he provides an epilogue on some of the people depicted in his anecdotes; he also elaborates further on various aspects of being a chef, on his own personal life, waxes enthusiastic on the food he has eaten, and gives the reader a detailed bunch of reasons why the likelihood of becoming a full-fledged, successful chef would be low if he or she were to attend cooking school.

The job of most chefs involves a ton of physical activity that is tough on the joints in an environment of high heat and humidity. Paying one’s dues once meant “…burn marks, aching feet, beef fat under the nails, and blisters.” Nevertheless, the kitchen is a meritocracy, where the irresponsible, faint-of-heart cooks get weeded out quickly.

Bourdain’s life has consisted of “…mistakes, failures, crimes, betrayals large and small.” He wrote Kitchen Confidential at a time in his life when he was furious; “the angry, cynical, snarky guy who says mean things on  ‘Top Chef’… [on] hurried hungover early mornings, sitting at my desk with unbrushed teeth, a cigarette in my mouth, a bad attitude…”
